Masala Chai
Ingredients
Makes two servings.
- 2 1/4 cups (532 ml) filtered water
- 1 3-inch cinnamon stick
- 3 whole cloves
- 4 green cardamom pods, cracked open
- 3 black peppercorns
- 1/2 tsp fennel seeds, optional
- 1/2-inch (~4 g) fresh ginger, peeled and thinly sliced or 1 teaspoon dried ginger
- 2 black tea bags or 3 tsp loose leaf black tea
- 1 cup milk
- 4 tsp sugar
Directions
- Lightly crush cloves, cardamom pods, and black peppercorns.
- Add water, milk, sugar, and spices to saucepan and bring to boil over high heat.
- Reduce heat and simmer gently for 7-10 minutes.
- Turn off heat and add tea.
- Steep for 5 minutes.
- Pour through a fine mesh strainer into mugs.
- Use a milk frother to create a foam on top.
