Ingredients
- 200 grams, 1 cup dried chickpeas or half dried chickpeas and half dried split fava beans, soaked for at least 6 hours.
- 15 grams, ~6 cloves garlic
- 100 grams, ~1/2 onion quartered
- 1 teaspoon coriander seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon black peppercorns
- 2 pods green cardamom, seeds only
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon hot chile powder
- 100 grams, ~1 cup chopped fresh herbs, any combination of parsley, cilantro, dill, or mint
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- oil for frying
Preparation
- Soak chickpeas hours and discard soaking liquid.
- Toast all dry spices and grind into powder.
- Add herbs, garlic, and onion to food processor and process into paste.
- Add beans, ground spices, and baking powder to food processor.
- Pulse until minced and can be formed into patties.
- Let sit for at least one hour in fridge
- Scoop into small patties and drop into 350°F oil until golden brown.
