Jerk Chicken

Ingredients
- 4 scotch bonnet peppers
- 6 scallions, roughly chopped
- 1 (2-inch) knob fresh ginger, roughly chopped
- 6 garlic cloves
- 2 tablespoons fresh thyme
- 1 tablespoon ground allspice
- 1 teaspoon freshly grated nutmeg
- 2 tablespoons dark brown sugar
- 1/2 cup soy sauce
- 2 tablespoons zest and 1/4 cup juice from about 4 limes
- 1/4 cup olive oil
- Kosher salt and freshly ground black pepper
- 1 large whole chicken split in half along breastbone, ~4 pounds
Directions
- Combine all ingredients in a food processor and turn to paste.
- Marinate for 24 hours.
- Place skin side up on cooler side of grill.
- Bring internal temperature of breasts up 145 °F
- Flip skin side down on warmer side of grill.
- Bring internal temperature of breast to 155°F
Ideally, grill/smoke with pimento wood chips.
